National Biscuit Day is finally upon us and we're choosing to celebrate with an easy Mocha Cookies recipe created by our Ambassador Mitch Lee. These Mocha Cookies are irresistibly good, with the flavour of our Fancy Cat coffee shining through and dark chocolate chips in every bite. You wouldn’t guess that they’re gluten-free, vegan and super quick to make!

Ingredients:

  • 1 Strong Double Espresso (60g Fancy Cat Coffee)
  • 250g Gluten Free Plain Flour (Doves Farm / Freee)
  • 110g Demerara Sugar
  • 45g Golden Caster Sugar
  • 75g Peanut Butter
  • 65g Coconut Oil
  • 50g Molasses / Treacle / Golden Syrup
  • 100g Dark Chocolate Chips
  • 40g Almonds (Crushed or Chopped into bits)
  • 20g Cocoa Powder
  • 1/2 tsp Salt
  • 1/2 tsp Bicarbonate of Soda
  • 1/4 tsp Xanthan Gum

Preparation: 15 minutes

Method:

This recipe makes 20 small, or 12 large soft and delicious cookies.

  1. Preheat the oven to 180°C and line two baking trays with non-stick sheets.

  2. Extract your delicious espresso and leave to one side to cool

  3. Melt your coconut oil in a pan, then add in both sugars, molasses and peanut butter and mix until you have a thick paste.

  4. Add the remaining ingredients into a mixing bowl and give it a little stir then transfer the contents of your saucepan and mix until well combined.

  5. The dough should be shiny and stick together as one pile, coming away from the sides of the bowl but soft enough to spread out when left. If the batter is still very sticky or wet, add a little more flour.

  6. Divide your dough into 15-20 small balls (roughly smaller than a gold ball) then spread out across your baking trays leaving enough room between balls to allow them to spread.

  7. Flatten slightly with the palm of your hand and then bake in the middle of your oven for 10-12 minutes. (This will vary depending on size of the balls – if the edges of the cookie feel firm but the centre is still soft, they should be ready to take out).

  8. The cookies will be very fragile until cold, so resist the temptation to eat straight away or pick up, leaving to cool on the tray for 15 minutes.

  9. Now share them with your loved ones - or simply enjoy them all to yourself...
